5.1 lollipop os is unstable at present, but we will update as soon as it releases.
Do you mean unstable for our device or generally speaking?
A XDA developer already launched a 5.0 cyanogenmod port with great success, stable and fast for MK808B Plus/MK809 Plus. I have tested it.
Also don’t think that 5.1 is unstable, as its being deployed right now in flagship devices like Galaxy S6 😉
